About Us

Jonah Shaw, founder of Catskill Food Company, grew up in the Catskill Mountains of upstate New York surrounded by home grown food and family farms. The Catskills embrace the region of New York known as “America’s Bread Basket of the Revolution.” With clean air, mountain spring water, and rich farm land, the Catskills have produced artisanal dairy, an abundance of seasonal produce, and heritage livestock since the 1700s.

Jonah’s first encounter with the food world started when he was four — in 1976 his mother started, and continues to operate, a whole foods coop that has become the area’s go-to source for local products. After high school, he took a year off, part of which was spent bicycling from London to Madrid.

Then Jonah went to Vassar College and, after graduating, lived in New York City, running his own graphic design company. It was there that he developed a greater love of food and cooking. So he took apprenticeships at the multi-star restaurants Berkley, Montrachet, and Nobu.

Jonah then ran several restaurants in Philadelphia before returning upstate to open the ever popular Quarter Moon Café. Along with his Catskill Food Company, he also focuses on catering, consulting, and event planning, as well as the Taste of the Catskills Festival, held every year on Columbus Day weekend.

Jonah founded Catskill Food Company on the principle that quality counts and that really great food shouldn’t be a luxury for the few. We make everything in small batches, using the finest ingredients — one bite, and you will want to try all of our sausage varieties!

About Our Pork

We use only “never ever” pork in all of our sausage and bacon. This means that the animals never have been administered hormones or antibiotics at any point in their lives.

How to Cook Our Sausage

What is the best way to cook our sausage? For us, the most important thing is temperature. Slow and low cooking will give you the best results no matter what your heat source is. We’ve cooked all varieties on a griddle, a grill, in a pan, and in the oven. It really depends on what you like and the result you’re after. When using a pan, we like to put some water in the pan to help diffuse the heat and help cook the sausage through before the outside gets too done. On a grill or griddle, keep turning regularly so that the sausage cooks evenly through. As for length of time, it generally takes us 15-20 minutes if we’re patient.

If you are in a rush and want to get them done faster, you certainly can, but you might experience casing splits as the water turns to steam on the inside and searches for a way out.

Store Policies

Shipping is usually by FedEx — ground delivery, home delivery, or express (whichever will get to you the quickest and most reliable to your area).

All sausage is shipped at a maximum of two days shipping time,  and for which must have a phone number.

Reshipping charge will be applied for incorrect/unreadable shipping address.

Each shipping address is a separate shipping charge.
